Christmas will certainly be different this year. We are celebrating in smaller groups and maybe not seeing all of the family that we like to enjoy the holidays with. One thing that will stay the same, however, is that I will get to bake cookies with my grandkids!

We typically do fish for Christmas Eve and a big traditional Christmas feast. Louie is not a fan of fish so seeing him try to avoid smelling it during dinner is always hilarious. I remember as a kid, he once stacked cereal boxes around his dinner plate to try to avoid the sight and smell of fish!
Baking together is always one of my favorite activities and the grandkids are always game! We typically bake up a storm with a few different cookie options, but one of my favorites to make is my Italian Rainbow Cookies.

INGREDIENTS
4 Eggs
2 Sticks of melted margarine
3 Tsp vanilla extract
1 Cup sugar
1 Cup flour
1/2 Tsp baking powder
Apricot Preserves
Food coloring: red, green, yellow
6 oz bag of chocolate chips
1 Tsp. oil
DIRECTIONS
Beat the eggs and sugar. Gradually add the flour, baking powder, and vanilla extract
Separate the batter into three equal parts and add one food coloring into each bowl
Pour the batter into three separate baking pans (10 1/2 x 7 x 1 1/4)
Bake at 350 for 10-12 min.
Cool. Then spread apricot preserves on all three layers and stack
Melt chocolate and oil in double boiler
Pour over cooled layer cake and chill
Flip over and chocolate other side
Chill well and cut
Enjoy!
